Familiar, traditional materials used in a modern way create a fresh interpretation of a Colorado aesthetic. On the building exterior, the layout and juxtaposition of textured and smooth limestone speaks to how an old material can be used in a contemporary way. Throughout the interior, rough limestone walls, timber beams and plaster ceilings achieve a modern sensibility.

The restaurant’s interior spaces are laid out more like a traditional home in order to create a diversity of rooms and experiences throughout the restaurant. One of the more unique experiences is passing through the kitchen to additional dining areas. These spaces offer a different vibe from the large, private dining room along Sixteenth Street, which opens to a patio through oversized accordion glass doors, offering diners a taste of Colorado’s famed indoor-outdoor experience.

On the exterior, a steel canopy extended over the patio overlooking the train platform, houses retractable fabric awnings for protection from the weather, and patio seating along the walkway between Hotel Born and the adjacent office building and provides side by side dining for those who enjoy people watching at the train platform.
